Impossible Pie

INGREDIENTS

  • ​2 cups shredded cheddar cheese (or other cheese)
  • 1/4 cup onion, chopped and sauteed in olive oil
  • 4 cups milk
  • 8 XL eggs
  • 2 cups Bisquick Mix
  • 1/4 tsp. pepper

CHOICE OF FILLING:

  • 1 to 1 1/2 lbs. bacon, cooked and crumbled
  • 1 lb. sausage, cooked and crumbled
  • 1 lb. cooked ham, in small pieces
  • 2 to 3 cups steamed or sauted vegatables

OPTIONAL ADDITIONS:

  • 1/8 cup roasted red pepper, cut in small pieces
  • 1/8 cup sun dried tomatoes, cut in small pieces
  • Salt

DIRECTIONS

Preheat oven to 400o F.
Lightly spray 9" X 13" X 2" baking dish.

Sprinkle choice of filling, onion, cheese and optional additions in prepared baking dish.
Put eggs, milk, Bisquick Mix and pepper in blender; blend about 15 seconds on high.  (May make 2 batches or use mixer)
Pour into baking dish over ingredients.

Bake at 400o F for 50 - 70 minutes until top is golden brown and knife inserted in center comes out clean.

Cool 5 minutes before cutting into squares.

Serves 12 - 15.
