Blueberry Buckle

INGREDIENTS

CAKE BATTER:

  • 1/4 cup butter, softened
  • 7/8 cup sugar
  • 1 XL egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 2 cups fresh washed, drained blueberries

TOPPING:

  • 2/3 cup sugar
  • 1/2 cup flour
  • 1/2 tsp. cinnamon
  • 1/3 cup butter, cold

DIRECTIONS

Preheat oven to 375o F.
Grease 8" X 10" cake dish.

CAKE BATTER:

In a large mixing bowl, cream butter and sugar with mixer.  Beat in egg.
In a small bowl, combine flour, baking powder, and salt. 
Add flour mixture to creamed mixture alternately with milk with mixer on slow speed.
Fold in blueberries by hand. Batter will be very thick.
Spread batter into greased cake dish.  
Sprinkle Topping (below) over batter.

Bake at 375o F for 40 - 45 minutes, until toothpick inserted in center comes out clean.

Cool on a wire rack.

Serves 16 - 20.

TOPPING:

In a medium bowl, combine sugar, flour and cinnamon.
Cut in butter until mixture resembles coarse crumbs.
